Just a quick post for the fun of it.
It’s always fun traveling around Wisconsin and experiencing new places and foods. But this past weekend we were in New York City, visiting friends instead. But we got a great taste of what Wisconsin can offer by visiting Chef Michael White‘s newest restaurant, The Butterfly. If you don’t know Chef White, he’s from Beloit, and is now the Executive Chef and Co-Owner of the Altamarea Group, which is composed of the restaurants Marea, Ai Fiori, Osteria Morini, Nicoletta, Costata and The Butterfly in New York; Osteria Morini and Due Mari in New Jersey, and Al Molo in Hong Kong. Marea has earned two Michelin stars and is a member of the prestigious Relaix and Cheateau. Ai Fiori has also earned a Michelin star. I could go on…but check out his bio.
So who’d think Chef White would have time for Wisconsinites any more? But he does. The Butterfly is his riff on Wisconsin Supper Clubs. I say riff, as he doesn’t stick to the usual menu, but you can find some great buttermilk fried chicken (he had me at the giant biscuit in honey butter), along with the totally Wisconsinesque Brandy Old Fashioned.
Chef White shared an appetizer recipe with Wisconsin Bites that we’ll make in September. In the meantime, if you plan a visit to NYC – check out what a Wisconsin native can do!
Have a good week!
