Every kid I know loves sprinkles. On their doughnuts. On their cookies. On their ice cream. I’ll be honest — sprinkles don’t do much for me. But then I found Gail Ambrosius Chocolatier‘s nibs.
Nibs. I even like the sound of it. :) But they taste better than they sound, as they’re cocoa beans and cocoa butter – with some sugar, butter and vanilla. And I put them on the fresh ice cream I made last week and ah…perfect little crunch and taste.
Anyone who knows Gail’s chocolates is probably asking why I’m focusing on this as this week’s pantry product over all the other excellent gourmet chocolates and truffles she offers. Well, it’s really not favoritism as much as it was a search for ice cream accents!
If you’re not familiar with Gail’s chocolates, you should make it a priority! Gail was named one of Dessert Professional‘s Top Ten Chocolatiers of North America in 2012. Food Network‘s Alton Brown named her chocolates “the Holy Grail of chocolate.”
Gail specializes in single-origin dark chocolate in her store in Madison (2086 Atwood Ave.), and you’ll find it in a variety of truffles, bars, flavors and more. Her signature chocolate is actually caramel with sea salt and Lucille’s Vanilla, which she says “tastes just like my Mom’s chocolate pudding when I was a kid.”
If you can’t make it to her store, her chocolates are found in other stores in Madison, Cambridge, Mineral Point, Mount Horeb, Spring Green, Sun Prairie, Viroqua, Eau Claire, Reedsburg or Minneapolis and Chicago. Or even easier, she sells them online.
So don’t reach for all that summer ice cream without a topping. Keep those nibs in the cupboard!
